Edit: it has been brought to my attention that this knife is on sale right now for $280 + tax. I'll just be honest with everyone: I can still return it to SLT for $239 to me. With $11 for shipping, that means selling it here for $250 nets me the same money as returning it to my local SLT, so in for order for packing it up to be worth it to me, I need to be charging more than $250 here. On sale as it is at the moment, $280 + 8% sales tax means $302 final cost for the knife new. I'll now ask $270 here, shipped. I posted in r/chefknives about this knife when I purchased it. It was a display model in store, and it had developed a bad rusty square on one side of the blade. I restored and re-sharpened the whole thing, and used it some over the holiday period, including thinning behind the edge a bit to really bring out the performance potential of the knife. However, looking at my collection of large carbon chef's knives, I've decided to let this one go even if it is really pretty much the ideal western-ish large chef's knife. It has been freshly re-sharpened on Shapton pro stones up to 5000 grit and then stropped on diamond paste and balsa, 50, 000 grit and then 200, 000 grit equivalents. Because it was purchased as a display model, I don't have any packaging for it beyond a generic Sur la Table cardboard blade sleeve, but it will be safely packaged before being shipped. 2. EDIT: SOLD Matsubara White #1 210mm Gyuto. Is $195 new, I'm asking $165 shipped ConUS. I bought this mostly to try out something with White #1 steel. It is the easiest steel to sharpen I have ever encountered, though this was only sharpened/stropped lightly once because I barely used this item. There are just other knives I use more. This thing is very, very thin and light, a true white #1 laser from a small Japanese smith. Here's the original product page for reference, pictures of the actual item for sale are in the imgur album linked above. 3. EDIT: SOLD Kohetsu SLD 170mm Bunka. Is $121 new, I'm asking $95 shipped ConUS. I bought this intending to replace and sell a very similar knife from a major commercial brand, until my significant other said she really wanted me to keep it. So this has been used I think twice ever, and the edge hasn't been touched from out of the box. Can't justify keeping two such similar knives though. This thing is very very thin at the edge for super performance, and also somehow has excellent food release -- nearly Takeda levels. A great great smaller knife I'm disappointed I can't keep. 4. EDIT: SOLD Shun Classic 4" Paring/Petty Knife. Is $50 new, I'm asking $30 shipped ConUS. A pretty standard issue VG-10 4" petty/paring knife. A great little knife, I'm just ready for something new. Functionally great, even if the blade shows signs of lots of cleaning and some sharpening over time. Freshly sharpened for sale. 5. EDIT: SOLD Wusthof Classic 6" Flexible Filet Knife. Is $95 new, I'm asking $60 shipped ConUS. A knife that has served me well for a long time, but I am also just ready for something new. Functionally great, even if the stick has long since come off and the blade finish has been dulled by lots of cleaning. 6. EDIT: SOLD Winco 10" Rounded-Tip Slicer. Is $21 new, I'm asking $20 shipped ConUS if bought on its own (because shipping is $11 to me), or I will add it to another item purchased for $10. A beater 10-inch slicer. It has been through my whole sharpening progression. If you need a big slicer for not much money that's really sharp, well here you go. 7. Miyabi 2-stage diamond/ceramic 2-stage hand sharpener. Is $50 new, I'm asking $30 shipped ConUS if bought on its own (because shipping is $11 to me), or I will add it to another item purchased for $20. Hand-held pull-through sharpeners are controversial around these parts, but this is much better than most. Really does do a good job with two spinning wheels that can be lubricated and cleaned with water rather than a stationary carbide V, and sharpens to a much more acute angle than most pull-through sharpeners, Miyabi's ~10 degrees per side.
